Making Old World Pizza Dough

Three 10" Pizza Dough Recipe —

Ingredients

1 1/4 cups lukewarm water
1 Tablespoon Extra Virgin Olive Oil
1 Tablespoon Natural Raw Honey
2 3/4 cups Type 00 Soft Wheat Pizza Flour
2 teaspoons Dry Yeast
1/2 teaspoon Salt

Preparation

In a bowl, mix the water, oil, and honey and set aside.

In a large bowl, with a wooden spoon or in a stand mixer
using the dough hook, combine the flour, yeast, and salt.

Add the water mixture and stir until it forms a soft ball.
Knead the dough for 3 minutes in the stand mixer or on
a floured surface.

Place the dough in a clean and lightly oiled bowl and cover
with a damp cloth and let rise in a warm, humid place
for 1-1 1/2 hours or until the dough doubles in size.
Cut dough into thirds and roll into balls. Then flatten and
stretch out each ball to shape and thickness desired.

Place each dough on corn meal sprinkled parchment paper.
Let rise again for 20-30 minutes.
Dough balls can also be refrigerated for up to 24 hours.

Each batch makes three medium crust 10” round pizzas.

Total Old World Pizza Kit output: five to six 10" pizza doughs
